Jeruselam Artichoke (10 Tubers)

Overview

Jerusalem Artichoke is one of those things that one should grow because they are prolific, perennializes even in our cold Montana winters, and provides a good source of starch (inulin), but make sure to prepare them right otherwise you'll see why they're euphemistically nicknamed "fartichokes"! These are hardy to at least -50°F if not more.
